Biological History & Beneficial Characteristics  

Pu-erh tea is a fermented tea that originates from China. The leaves and buds are picked when ripe and endure a careful microbial fermentation and drying process to preserve the sweet richness of the tea. In the drying process, the tea leaves endure a roasting procedure to change the colours of the green leaves to a darken smoky colour. Pu-erh tea is known for it's uniquely regal flavour and empowering caffeine content which can benefit healthy mental alertness. Similar to fine spirits and wines, Pu-erh tea increases in value and taste as it ages if stored in the proper conditions. This is one of the most popular teas in daily Chinese society and is enjoyed at all hours of the day. Additionally, Pu-erh is appreciated greatly in the Russian culture as the tea of choice brewed hot or part of a Чайный гриб (Chayniy grib) kombucha recipe. Preparing this special tea requires special attention to extract the full taste that it has to offer. First, pour a little hot water on the tea bag to allow for an infusion process to begin similar to brewing a quality espresso. After 10 seconds, fill with the desired water level and enjoy.
